
This spring, one of my projects was to create a green space on our patio. When I built our little herb garden one afternoon, I began daydreaming of all the garden-to-table meals we could enjoy. Our sweet basil is thriving, lemon thyme and lavender flowering, but our mint leaves are really flourishing. I wanted to incorporate the fragrant leaves, and a classic mint mojito seemed the perfect way to go.
One of my favorite summer sips, the classic mojito is made from fresh mint, tart limes, fizzy soda water, and white rum. Garnished with mint leaves and a small wedge of lime, the mojito is the perfect drink to cool off in this southern heat.
To make this cocktail alcohol-free, just omit the rum and replace with club soda or sparkling water.

Classic Mint Mojito
Ingredients
- 5 mint leaves, with more for garnish
- 2 ounces white rum (I like Bacardi Silver)
- 1 ounce freshly-squeeze lime juice
- 1/2 ounce simple syrup
- ice
- club soda
- lime wedge, for garnish
Instructions

Lightly muddle the mint in the bottom of a cocktail shaker until aromatic. Add in the white rum, lime juice, simple syrup, a handful of ice, and shake.

Strain into a glass filled with ice. Top with a splash of club soda or sparkling water, and garnish with mint leaves and a wedge of lime.
